Vanilla Crunch Breakfast Parfait

Serves 1
1 Serving = 8 ounce parfait dish or glass

  • 3 ounce small curd, low–fat cottage cheese
  • 3 ounce non–fat light vanilla yogurt
  • 4 teaspoons pecans, chopped
  • 2 tablespoons low–fat granola cereal
  • 2 strawberries, sliced
  • 1 kiwi, peeled and sliced
  • 1 tablespoon fresh blueberries


  1. Combine cottage cheese and yogurt in a food processor or blender and process until smooth. Pulse to get desired consistency.
  2. Spoon 1 tablespoon of yogurt mixture into the bottom of the glass.
  3. Top the yogurt with 2 teaspoons pecans and 1 tablespoon granola.
  4. Layer half of the strawberries, kiwi, and blueberries over the granola and pecans.
  5. Repeat this process once more starting with the yogurt mixture.

Use any fresh fruit in season, or any frozen fruit.
